A delicious twist on the classic mango sticky rice, featuring ube extract for a unique flavor and color. Made with sweet glutinous rice, coconut milk, fresh mangoes, and toasted sesame seeds.
1. Clean/rinse your rice. Cook your sweet rice in a rice cooker. (For water content reference, fill 'til 1/4 of your fingertip of extra water over the rice).
2. In a medium saucepan, mix coconut milk, sugar, & a pinch of salt together. Heat on medium-high while stirring 'til it begins to simmer slightly, then remove from heat. Take a cup out of your coconut mixture and mix into your cooked rice. (If it is still liquidy/gooey, the rice will absorb it all, don’t worry!) Set aside.
3. Mix corn starch with water in a small bowl, then mix it into your small saucepan with the remaining coconut mixture and 2 pinches of salt. Heat & stir on medium 'til it starts to thicken. Take off heat. Taste for sweet-salty preference. Add ube extract and mix together, taste to your ube liking.
4. Cut and plate your mangos, sticky rice, and top with ube coconut sauce & toasted sesame seeds.
5. Enjoy!
