A traditional Vietnamese beef stew featuring tender beef, carrots, and a rich broth seasoned with lemongrass, star anise, and umami goodness. Typically paired with a toasted baguette for dipping.
1. Cut beef into 1-inch thickness. Season the meat with all ingredients listed under 'Beef Marinade' and marinate for 2-4 hours. Cook the marinated beef in a large pot on high heat with oil until the sides are browned.
2. Add all stew ingredients (except carrots and cornstarch) into the pot. Let it simmer on medium-high heat until the broth reduces by about 1 inch or for approximately 30 minutes. Add in the carrots and let them cook for another 20 minutes. Finally, add cornstarch for thickness.
3. Once the stew is ready, serve it in a bowl and top with fresh cilantro and sliced red onion. Lightly toast your baguette and enjoy!
