Dubai Chocolate Strawberries

1. wash strawberries and pat dry
2. chop kataifi until fine pieces 
3. in a pan on medium-high heat, melt butter and toast your chopped kataifi til it’s light amber in color. set aside to cool in a bowl
4. once toasted kataifi is cool to touch, add and mix in your pistachio cream (or pistachi butter + tahin). on a baking sheet with parchment paper, spread out your pistachio mixture and freeze for 5-10min til it’s solid to mold
5. grab some of your cold pistachio mix and mold it around your strawberry. I suggest flatten a layer on your palm first then carefully cover the strawberry (your hands WILL get messy!) once done, put in freezer for 5 min
6. melt your chocolate in a bowl and microwave in bursts of 15 sec and stir til melted OR double boiler method til melted (in a pot, simmer water and hover your chocolate bowl over the heat and stir til fully melted)
7. take strawberries out of freezer and carefully dip them in the melted chocolate. place dipped strawberries back on parchment paper and sprinkle crushed pistachios while the chocolate is still melty. enjoy!
