Honestly one of my most beloved snacks of all time! It is pretty thicc but wrapping it in cling wrap will help keep everything together. Worse case scenario, it might be your first time having deconstructed mac spam musubi. Ooo now we’re fancy
Mac Salad:
1. Bring a large pot of water to boil. Add macaroni, cook until soft, 10-12 minutes. Drain, immediately mix with apple cider vinegar in a bowl. Let cool in fridge.
2. In a large bowl, mix together mayo, shredded carrots, scallions, brown sugar, salt, pepper, & 10 crab sticks (that have been cut into small thirds).
3. Take out mac from fridge and mix mac into mayo mixture. Set in fridge until serving.
Musubi:
1. Prepare rice.
2. Mix together soy sauce, sugar, oyster sauce, sesame oil, mirin (optional), and sriracha in a bowl. Set aside.
3. Open spam can and cut spam into 8 pieces long ways. Save the can for a musubi mold if you do not already have a mold.
4. Oil a pan & brown both sides of spam on low-medium heat.
5. After browning, pour sauce on spam & let simmer on low heat until slightly glazed & thick. Flip & coat both sides.
6. Cut nori paper into 1/3 sheets.
7. Dampen a surface with a little water to prevent rice from sticking. Into the musubi mold, add rice, then the mac salad, & then furikake on top. Press down into the mold to form a compact rectangular shape. Put coated spam on top. Take nori (shiny side on outside) & wrap around the musubi, tucking the nori underneath & connect.
8. [No mold?] Line cling wrap in your spam can (be careful, inside of the spam can can be sharp). Stuff the can in the same order as step 7. Compact with a spoon. Pull out the wrap to take out the musubi & wrap with nori.
