This recipe elevates a classic grilled cheese with spicy, tangy, and umami-rich Jongga kimchi, sautéed with sesame oil and a pinch of sugar. The addition of a spicy mayo spread and mozzarella creates a comforting and flavorful sandwich.
1. Sauté Jongga kimchi with a pinch of sugar and 1 teaspoon of sesame oil on medium heat in a pan for 2-3 minutes. Set aside.
2. Grate mozzarella cheese. Set aside.
3. Mix 1 tablespoon of mayo (Kewpie suggested) and 1 teaspoon of hot sauce/gochujang together. Set aside.
4. Slice your chosen bread. Coat one side of each bread slice with regular mayo. Layer one slice with the spicy mayo mix, then the sautéed kimchi, and finally the mozzarella. Top with the second slice of bread (mayo-side facing out).
5. In a pan, heat the sandwich on medium heat with the lid on top to allow the cheese to melt. Flip when the bottom is golden brown, then continue to melt/toast until the other side is golden and the cheese is fully melted.
6. Serve immediately, optionally dipping with tomato bisque. Enjoy!
