In honor of Pokemon Day, this recipe makes 'jelly donuts' (onigiri) that are typically filled with pickled plum or kelp, but can be customized with any filling. This version features a simple sushi rice base with a spicy salmon filling.
1. Cook 3 cups of sushi rice.
2. Mix 1/4 cup rice vinegar, 1 tbsp sugar, and a pinch of salt together. Add this mixture into 4-5 cups of the cooked rice.
3. Cut nori sheets into rectangular strips.
4. Score and lightly salt the salmon. Airfry the salmon for 9 minutes at 375°F. Once cooked, mix and mash the salmon with kewpie mayo and sriracha.
5. Using an onigiri mold (optional), layer sushi rice, then the salmon filling, then more rice. Press down the mold and push the onigiri through. If making by hand, wet your hands, make a 'bowl' with the rice, place the filling inside, encase the filling, form a ball, and then shape it into a triangle.
6. Place and wrap a nori strip underneath the rice triangle. Enjoy your jelly donut!
