Poached Pear à la mode Ingredients poached pear: ½ bottle red wine 1 orange ½ cup sugar 2-3 cinnamon sticks 2 star anise 4 conference/bosc pears gram cracker crumble: 2 gram cracker sheets 1 tbsp unsalted butter (softened) 1 tsp sugar 1 tsp vanilla extract 1 tsp cinnamon pinch of sea salt vanilla ice cream (i love the madagascar vanilla bean talenti) poached pear: 1. peel thick skin slices of the orange. pour red wine into a medium saucepan (you can measure the right pan size by placing your pears inside too) along with the orange peels, juice from the orange, star anise, cinnamon stick and sugar. Simmer & stir to dissolve the sugar on medium heat 2. peel the pears while leaving stalk attached. core the pears from the underneath, maintaining their shape and keeping them whole. place the pears into the pan & leave them to simmer very gently for 25 minutes, turning them over gently and occasionally so that they colour evenly 3. [optional] take out the pears & return the wine stock to the heat and reduce the liquid by half to get a sticky glaze (this step is best done right before plating) gram cracker crumble: 1. preheat oven to 350F 2. crush graham crackers into fine crumbs in a plastic bag or processor 3. in a small bowl combine butter, sugar, vanilla, cinnamon, salt & graham crackers crumbs. pour & spread the mixture on a baking pan & bake for 7 min plating: 1. plate by lightly drying excess liquid off the poached pear & let it stand (if it doesn’t stand, cut the bottom to make it flat) 2. make a nest with your gram cracker crumble & use a deep spoon to lay your ice cream on top 3. [optional] drizzle your sticky wine glaze on top of the pear (if glaze is prepped too early & hardened by now, just add some extra poach mixture in & reheat) #poachedpear #pears #dessert #french #homemade #alamode #gramcracker #recipe #vanilla #icecream #foodie #food #sweets #foodreels #feedfeed #foodphotgraphy #easyrecipes #datenight #wine #redwine #foodporn #dessertporn #desserts
