Tocino Spam Musubi

1. Wash & cook rice (using day old rice is better but if you’re making a fresh batch, make sure it cools before doing the garlic rice later!)
2. Mince garlic.
3. Cut nori sheets into long rectangles (I cut my large sheet down the middle and that size should be perfect).
4. Cut tocino spam into 8 slices, longways.
5. Lightly oil pan and cook spam on medium heat til it browns on both sides (or til it fulfills your crispy edge desires). Set cooked spam aside. Lightly oil pan again and cook your eggs to your liking (I made mine ‘over medium’). Set aside cooked eggs. Oil pan again & cook minced garlic til golden brown on medium heat. Once brown toss in your rice & mix. Remove from heat.
6. Using a musubi mold, fill with cooked garlic rice, then press down using the mold press to make a musubi shape. Top with cooked tocino spam then egg. Wrap with nori sheet.
7. Enjoy!
