Ube Custard Pie with Graham Cracker Crumble
20 mins prepServes 8
This recipe is inspired by a beloved dessert from LA, described as a creme brûlée without the brûlée, featuring a creamy ube custard and a soft graham cracker crumble. It's a unique and irresistible treat that the creator considers a mini obsession.
1. Preheat oven to 350F. Set a 9-inch pie dish in a roasting pan.
2. In a large bowl, whisk eggs, egg yolks & sugar together. Add evaporated milk, condensed milk, & ube flavoring and whisk until thoroughly combined.
3. Pour custard into the pie dish. Fill the roasting pan (outside of the pie dish) with hot water until it reaches the height of the custard in the pie dish. Cover the pie dish with foil.
4. Carefully place in the oven & bake for 50 minutes. Once done baking, remove the dish from the roasting pan (it should have a jiggly consistency) & let cool until room temperature. Keep refrigerated.
5. In a bowl, crush graham crackers until fine. Mix together (with your clean hands) Greek yogurt & brown sugar to make small crumble pieces.
6. Top your ube custard with the crumble (optional: sprinkle purple sanding sugar). Enjoy!
